Go Green Smoothie

Ok, this is not your ordinary average smoothie. Stick with me for a minute...you too Rosie & Ms.C!

I got this recipe from Kelly @ Think Feel Be. I actually first came upon her...totally by accident...on FB. (She is very inspirational...I think she should move out West!) She was doing a "Go Green Smoothie Challenge" Ms.C & I had recently embarked on a healthy eating journey and this was a perfect way for me to incorporate my fruits & vegetables. Not only is it filling....VERY filling, but it tastes good! I swear! Even though....it's not pretty to look at...but honestly, I have one almost everyday...

Here is what you need;

1 tbsp Chia Seeds <---read here about Chia seeds...you will be amazed!
1 banana
3 cups fresh spinach (don't run screaming...)
6 oz cold water
2 oz orange juice
I have been adding strawberries also...it's that time of year you know...

Now Blend! And Enjoy!

I did it! Look! My TITLE line is back!

But I still cannot figure how my posting/comment line made its way to the top of my posts...anyone???any smarty pants out there???

Inspired by Ms. Cupcake & her strawberry delights the other day, so I took a page from her book & I decided to do the same. Fresh baked strawberry muffins. (I'm telling the hubby that I fresh baked them for HIM & will have a pot of coffee waiting for him when he gets home from work....tadaaaaaaaa! super wife) I will share my recipe with you...



•2 cups flour
•3 1/2-teaspoons baking powder
•1/2 teaspoon salt
•1/2 cup plus 2 tablespoons sugar, divided
•1 egg
•1 cup milk
•1/3 cup vegetable oil or melted, cooled butter
•1 teaspoon vanilla
•1 cup chopped strawberries
•1/4 teaspoon cinnamon

Preparation:
Preheat oven to 375 degrees F. Grease 12-cup muffin pan. Combine dry ingredients, flour, baking powder, salt and 1/2 cup sugar with a wire whisk. In a separate bowl, combine wet ingredients, egg, oil and extract. Add strawberries. Combine wet and dry ingredients only until moistened. Spoon batter* into muffin cups. Combine remaining sugar with cinnamon and sprinkle over batter. Bake for 20 to 25 minutes.

I have to sample of course before Mr. Rocketgirl gets home....deelightful! Enjoy!

मॅँ ने यह! भारतीय खाद्य!

Did you get that?? It says...I did it! Indian Food!


After another day of taxi-ing the kidlets, yoga-ing, jogging, perusing garden stores and second hand stores...all by my lonesome today I might add AND finding nothing to buy, I decided to get adventurous in the kitchen. I quite enjoy hunting down ingredients to try new recipes. Tonite I decided to tackle Indian food.

I will have you know, that on a good day, my dog can make a better pot of rice than I can. BUT, I made a lovely pot of basmati rice, chana masala (chick peas, onions, garlic, ginger, tomato puree & a whole plethora of spices), tandoori chicken, and handmade/homemade, yes that's right....handmade AND homemade roti.

Can you say dee-lish? So spicy! So good! So not the usual, kwim? I'm not sure if I should bring some leftovers to work for my Indo-Cdn co-workers to critique...I bet I already know what they'll say...PERFECT!

Here comes the sun....

I cannot get over this gorgeous weather day. It's noon and it's 16 degrees. Are you kidding me?? Wait, I know what you are thinking, it's noon, it's amazing out and you are on your laptop?????

Well I've been pretty busy today I will have you know. Boys off to school, Rocketgirl off to yoga, Rosy off to the groomer for her very first time, Rocketgirl to the track...no not the betting track...the fitness track...off to the fruit/veggie market, SOF for groceries, walk Roy, make some calls for Mr Rocketgirl...and now I am taking a breather on the couch with my Go Green Smoothie: no banana today....cleanse day...greens day. (Ingredients; 3 cups spinach, 1/2 cup OJ, 1/2 cup acai berry juice, 1 scoop chia seeds). I have a goal you know...a health/fitness goal....I have two months left to attain that goal. Says who? Says me...and sometimes says Mrs Cupcake when I have a donut in my hand ;) Thank goodness she keeps me in line!

Sorry to disappoint, but I just don't think that sewing machine is comin' out of the box til after my set...next day off after today is Friday. I'm very IMPATIENTLY awaiting some fabrics that I ordered from Etsy...some Butler, Kaufman etc. And then I hope to sew up a storm! A STORM I tell ya!

angst. if that's how you spell it...

so far so good. this set, dare i say, has been really good. two nights to go. don't groan, don't feel sorry for me. i cannot wait to do two nights back to back. been a while....i miss day sleeping, it's true.

weekend update; the spaghetti lobster was a total & utter hit! he said he was shocked i actually made it, as in took his request seriously. he said i needed to cook it for his father, which is the ultimate compliment, as my dear FIL is the best seafood cook i know. i made a peach cobbler type dessert from bakerella's website for dessert. there was a brief moment of panic when steve inadvertently came into the kitchen and saw the amount of butter i was using...he got over it, and ate it, and loved it.

i learned some new nursing terms this week and have thusly woven them cleverly into my charting. obtund & natal cleft. feel free to use them in your charting. go ahead. on a side note, i bumped into my old manager today who said, "i really miss you" ha!

i have utter fear & panic growing in me tonight. i heard some very distressing news on the weekend about a classmate of q's & more disturbing news today about one of his friends. i feel like i will never be able to protect him & safeguard him. i am so afraid and fearful for him in these formative years. i feel like it's august again....all those panic attacks about middle school.

my best friend, it's his birthday today. i love him with all my heart & soul. he gives me far more than i could ever give him. he does more for the boys & i then i could ever hope to repay him for. does that make sense? sure it does. i love you my steven.
